Trapped a couple Hogs this weekend

Buddies place is invested with them. We installed a trap recently and he's been cleaning house. He caught two on Friday before I got out there and two more on Sunday. Fucking things are mean as hell. 147 grain HST hushed made quick work.

Yes,

Overnight salt water brine/soak wild pig roast & loin gets the hot grill/smoke 165+ deg internal, it's rarely juicy & tender when fast cooked this way, it's great sliced for hogie and cuban sandwiches.

I usually pressure cook seasoned up wild roasts & loin then low heat smoke to get the tender juicy with a bit of smoke flavor, it's good for pulled/shreaded bbq style.


Most of wild and hogs I've raised steaks & chops get pan fried or flame seared/grilled.

Wild or hogs I raised ribs get sawsalled cut into rack size, they get rolled & tied and the salt brine too, then pressure cook, season up & low heat smoked.

meat for sausage gets salt brined, then rinsed, ground up, seasoned, then put into qt size ziplocks, sealed n thrown in freezer.

I never could make bacon old style way where it's tender when fried like my pop n uncle did, they brined & seasoned in fridge like a week, then sugar & salt it wrap in cheese cloth and wood smoked.

I've tried multiple times, tastes good but tough & chewy, it's good cooked with fresh greens, pintos and corn or hominy soup.

If you scald & scrape, you can rinder lard and make cracklins from the hide/skin.
 
Anybody you guys ever use a Pig Brig?

It's the net thing, so it's passive. You don't have to sit awake all night watching and trying to get them to all go in. They just wander in a few at a time and they can't get out.

I have a friend that knows jack about pigs and he's catching the crap out of them. He has a neighbor that comes & loads what he wants and they kill & stack the rest. He was catching so many they over ran the processor that was taking them. Plant made them stop bringing them for a week a couple of different times.

I haven't been down to witness it in person yet, but the pics & videos are pretty neat.
