French Toast

I had posted this at OSA, thought I’d share it here also. We trail ride in Arkansas every year and this is the go to breakfast I make when we are camping.

French toast the correct way.

I hate the egg washed crap that you get at most places. Here’s my recipe that my wife flips out on.

3- eggs
Flour
Baking powder
Cinnamon powder
Milk
Bread

In a shallow pie pan whip three eggs. Add about 1/2 to 3/4 cup of milk, stir.
Add about 3/4 cup flour, tablespoon of baking powder, tablespoon of cinnamon.
Whip or stir until it has the consistently of pancake batter. The above portions are a guess as I don’t actually measure when I make my batter as I have made it so many times I don’t need to.

In a frying pan add vegetable oil to about 1/4” deep. Heat to about 350 or so.

Toss slice of bread in batter, flip it over and coat both sides. Drop in hot oil and fry until brown and crispy.

We don’t even put butter on these just syrup. Enjoy.

Our favorite syrup that is like finding hens teeth here in OK, is Karo pancake syrup. My brother can find it in Alabama, when we went to SD trail riding a couple years back found it there.

What kind of trail riding… horses, Jeeps, atv’s, etc? I’m planning on heading over to the Ouachita mountains in April sometime to hit some of the trails with my Jeep.
